Steamed Artichoke


Ingredients

Fresh Artichokes (3-4)

2 Lemons (1 for juice, 1 quartered)

Sea Salt


Instructions


  1. Bring water to a boil in the lower part of a steamer pan. Add the juice of 1 entire lemon to the water along with a few tsps of salt.

  2. Prepare artichokes by snapping off outer, tough leaves. Cut the top 1/3 of of the artichoke off with a serrated knife. If any leaves with spiky tips remain, cut them with kitchen shears. Cut the bottom of the artichoke at the stem so the artichoke can sit upright. Take a lemon quarter and rub the top of the artichoke and sides to prevent discoloring.

  3. When water is boiling, place artichokes into the top of the steamer basket. Cover with a lid and let steam for 35-40 minutes.

  4. Remove from pan. Generously sprinkle fresh sea salt over cooked artichokes. Serve warm or room temperature with melted butter, olive oil, and/or lemon juice.
