Sour Cream Cake with Berries

A simple yet delicious cake to make this spring or for your Easter celebration! The dense cake and light whipped topping are the perfect combination for an after dinner sweet.




Sour Cream Cake with Berries

Cake

3 cups of all purpose flour

4 tsps baking powder

1 1/2 cups sugar

Pinch of salt

1 cup vegetable oil

4 tsps vanilla extract

2 eggs

2 cups sour cream


Frosting

1 Pint Heavy Whipping Cream

3/4 cups powder sugar

Strawberries

Mint Sprigs

  1. Preheat oven to 350 degrees. Grease two round 9 inch cake pans.

  2. Mix flour, baking powder, sugar and salt together. In a separate bowl combine vanilla, oil, and egg - mix lightly just enough to break up the egg yolk.

  3. Stir the egg mixture into the flour. Add sour cream and combine all ingredients. The batter will be thick.

  4. Transfer cake batter to prepared cake pans. Bake cake for approximately 35-40 minutes or until a toothpick inserted in the middle comes out clean.

  5. Leave cake to cool slightly before carefully removing from cake pan and leaving on a wire rack to cool completely.

  6. Once the cake is cooled completely, whip the heaving whipping cream with the powder sugar with a mixer. Once the whipping cream will hold peaks it is ready.

  7. Frost the first layer of cake generously and add strawberries on top of the frosting. Add the next cake layer, frost generously with remaining frosting. Add berries and garnish with mint leaves on top of the cake and enjoy!
