Ingredients
3 lbs yellow baby potatoes, sliced
3 Tbsp olive oil
2 tsp salt
2 tsp pepper
2 Tbsp dried rosemary
2 Tbsp dried thyme
Instructions
Preheat oven to 425. Slice potatoes in half (longways).
In a large bowl, mix all ingredients together.
Pour potatoes onto a large baking sheet and roast for 45minutes to 1 hour until desired crispiness and color is achieved. Let sit for 5 minutes before serving. Enjoy!
