A quick salad you can easily throw together for your spring or summer gathering. Add in any additional vegetables you desire to brighten up your toppings. The dill dressing is bright and earthy that can also be used as a marinade for dishes like chicken or fish!
Lemon Dill Salad
1 Package Salad Mix
1 Package Spring Leaf Mix
1 Medium Onion
1 Avocado (cubed)
Crumbled Feta
1 Lemon thinly sliced
1 Carrot cut into small strips for garnish
1 sliced Radish for garnish
Lemon Dill Dressing
3 Tbs of Olive Oil
1 Tbs of Lemon Juice
2 tsp of Chopped Fresh Dill
1 Tbs of White Vinegar
1 Tbs of Light Sour Cream
1 Tsp of Sugar
1 Tsp of Spicy Brown Mustard
Combine all dressing ingredients in a bowl and whisk together until smooth and well blended.
Add all salad ingredients to a large bowl. Garnish the top of the salad with slices of lemon, radish, and carrots.
Drizzle dressing over salad, toss, and serve!
