Easy Halloween Dinner

When all the ghost and goblins have set out for trick-or-treating it's sometimes scary to think about getting dinner ready for the kids with the little time you have...especially a healthy one! The past few years we've created a new Halloween dinner tradition that's not only healthy, it's hearty, delicious, easy to make and has spooktacular reviews from everyone! With all the candy consumption, you'll feel much better about providing your little monsters a delicious and healthy option by serving our Lentil and Veggie Chili. Since it's all cooked in a crockpot, it makes it easy to prep or even make the day before!


Lentil & Veggie Chili Recipe


3-4 bell peppers of your choice, seeded and diced

1 cup of uncooked lentils, rinsed

1 small yellow onion, finely chopped

1 15oz can cannellini beans

1 15oz can pinto beans

1 15oz can diced tomatoes

1 Tbsp chopped garlic

1 6oz can tomato paste

1 Tbsp chili powder

1 tsp smoked paprika

1 tsp ground cumin

1/2 tsp onion powder

1 tsp salt

1/2 tsp white pepper

2 cups vegetable broth

1 cup water (more as needed)


Combine all ingredients into your crockpot and gently stir until evenly distributed. Cover and place on low for 8 hours or on high for 4 hours. Add seasoning and water as needed. Serve hot with your favorite toppings. We suggest offering shredded cheese, sour cream, avocado, and jalapenos or add in Fritos for a chili pie!



Recipe alternatives:

- Switch out the beans with whatever style your family prefers

- Add corn for a southwestern twist

- Don't have all spices on hand? Try a chili seasoning packet from your local grocery store.
