"I have to admit, there is really nothing that can beat homemade ice cream made in an old fashioned ice cream maker, but this recipe comes close! The best thing about it is there is no machine involved and all you have to do is mix and freeze. The result is a smooth and creamy ice cream. Not a coconut fan? Add whatever ingredients you desire. Ingredients:
2 cups heavy cream
2 egg yolks
1 14 oz. can sweetened condensed milk
1 tablespoon vanilla
1 tablespoon dark rum
3/4 cup Coco Lopez
Optional: Coconut flakes sprinkled on top. (I like to add a bit of cinnamon to the top!)
Instructions: Beat heavy cream in a chilled mixing bowl until whipped. In a separate bowl, beat egg yolks, condensed milk, vanilla, rum, and coco lopez until well blended. Fold in cream. Pour mix into a 2 quart freezer safe loaf pan. Top ice cream with your choice of toppings like coconut flakes, fruit, or nuts if desired. Cover with saran wrap and freeze overnight.
