Dill Potato Salad

This isn't your grandmother's potato salad, but it's just as good (if not better!). We love the simplicity of this dish compared to a more traditional potato salad. The dill, onions, and chives make this salad so delicious. A perfect addition to our summer picnic or dinner!

Dill Potato Salad

  • 2lbs red potatoes halved

  • ½ cup diced celery

  • 3 green onion stalks finely chopped

  • 2 tbsp chopped chives

  • ¾ cup mayo

  • ½ cup sour cream

  • 1 tbsps lemon juice

  • 4 tablespoons fresh minced dill

  • 1 tbsp apple cider vinegar

  • 2 tsp salt

Directions:

Boil potatoes until soft and tender. Set aside and cool. In a bowl combine the rest of the ingredients and mix until blended. Add in potatoes and fold ingredients until potatoes are well coated. Chill for at least an hour until ready to serve. Top and garnish with fresh dill and chives.
