Cucumber Tea Sandwiches

Tea sandwiches are the perfect small bite for easy afternoon entertaining. These little delights are made with equal parts cream cheese and butter and seasoned with things you already have on hand. Inviting someone over for a cup of tea and sharing this small, fresh cucumber sandwich is sure to impress and make your guest feel special! Add these to your holiday get togethers like an Easter brunch for a light, but tasty bite!



Cucumber Tea Sandwiches


1 loaf of white bread

2 cucumbers

8 oz of cream cheese (softened)

8 oz of butter (softened)

1 shallot (minced)

fresh dill

garlic powder

salt and pepper


  1. Slice 1 cucumber into thin slices. Cube and process the other cucumber in a food processor or blender. Take the crushed cucumber and lay out on a towel to absorb liquid.

  2. Cream together cream cheese and butter until smooth. Add shallots and processed cucumber to the cream cheese mixture. Add dill, garlic powder, and salt and pepper to taste.

  3. Spread the cucumber mixture on a piece of bread, top with thinly sliced cucumbers. Cut off the crust and cut the sandwiches into triangles or squares.

  4. Place cut sandwiches on a platter, top with fresh dill. If not serving immediately, cover the sandwiches in a lightly dampened tea towel or paper towel and cover in plastic wrap. Keep the sandwiches covered in the fridge until ready to serve.
