Corn Avocado Salad

This easy side dish might steal the show! The deep flavor of roasted corn, mixed with the nuttiness of ripe avocado is a real treat! Serve this salad at your next BBQ or summer picnic and it will definitely be the talk of the party!






Corn Avocado Salad


Ingredients

3 large ripe avocados, pitted, peeled, and cut into chunks

2 cups of roasted corn kernels

3 shallots, ends trimmed, thinly sliced

1/4 cup chopped fresh cilantro

2 tbsp. fresh lemon juice

Salt & pepper to taste


Instructions

Combine all ingredients in a bowl. Gently fold. Serve immediately or refrigerate up to 1 day in advance. Garnish with fresh cilantro.
