Fried Cod Filets
Ingredients
1 1/2 lbs cod fillets. Cut into strips.
1/2 cup flour
2 eggs, beaten
1/4 cup coconut milk
1/2 cup panko bread crumbs
1/2 cup crushed saltine crackers
1/2 teaspoon garlic salt
1/2 teaspoon onion powder
1/2 teaspoon paprika
Light Vegetable Oil for frying
Directions
Whisk the egg and coconut milk in a medium bowl; add the cod and set aside to soak. Mix the flour, crushed cracker and panko, spices and salts in a shallow bowl.
Heat one inch of oil in a skillet over medium-high heat. Remove the fish from the milk mixture and dredge in the flour mixture, turning to coat. Fry in the hot oil until golden brown, 2 to 4 minutes per side. Transfer with a spatula to a paper-towel-lined plate to drain. Plate and serve with tartar sauce (see recipe below), cut lemons, and malt vinegar.
Hand-Cut "Chips" Home Fries
Ingredients
3 Large Brown Potatoes
3 Tbs olive oil
2 Tbs cornstarch
2 tsp onion powder
1 1/2 tsp salt
1 1/2 tsp parsley (dried or fresh)
1 tsp pepper
Directions
Preheat oven to 450 F. Slice potatoes into 1 inch wedges.
Place sliced potato wedges into a large bowl. Add the remaining ingredients and toss to cover and coat the potatoes in the oil and seasonings.
Line the potatoes in a single layer on a large baking sheet. Roast the potatoes for 45 mins, turning when 15 mins is left on the timer. Potatoes should be brown and crisped after 45 mins, cook longer if needed by increments of 5 mins.
Remove potatoes, season with more salt if desired. Serve immediately.
Perfect Tartar Sauce
Ingredients
1/2 cup mayonnaise
3 Tbs minced sweet pickles (bread and butter)
2 Tbs chopped dill
1 Tbs minced capers
1 Tbs lemon juice
1/2 tsp Worcestershire
1/2 tsp dijon mustard
Salt and pepper
1. Combine all ingredients in a bowl and mix together. Ingredients should be combined well. Best if made at least 30 mins in advance but can be served immediately!
Notes
If serving sauce for a party, garnish with a lemon wheel and fresh sprig of dill.
Tartar will keep for up to a week in an airtight container.
