Nothing is more classic than a cup of spiced eggnog during the holidays. It's rich texture makes for the perfect late night Christmas treat at your holiday gathering. You can always purchase this delicious concoction pre-made, but nothing beats a batch of homemade eggnog. Even the most adverse person to eggnog finds the enchantment to a homemade cup when this recipe is whipped together!
Homemade eggnog is light, fluffy, packed with flavor and actually very easy to make!
Matt's Holiday Eggnog
(Serves 10-12 Punch Sized Cups)
6 eggs
3/4 cups of sugar
1 pint of heavy whipping cream
1tsp of vanilla extract
1 tsp of cinnamon
1 cup of whisky, brandy, or rum (optional, allows egg nog to keep for several days).
Nutmeg for garnish.
Separate eggs into two different bowls. One for the egg yolks and one for egg whites. Add 1/2 cups of sugar and 1 tsp of vanilla to egg yolks and beat yolks until light and a lemon color. If using liquor, add it to the egg yolks after beating them.
Add 1 pint of heaving whipping cream to the yolks mixture and whip together. Stir in cinnamon and set yolks aside.
Beat egg whites with 1/4 cup of sugar until stiff peaks form. Add yolks to whites, gently folding together until combined.
Serve immediately or keep in the fridge in an air tight container for up to 3 days. (If not using liquor, eggnog will not keep past a day.)
Before serving, garnish eggnog with a generous dusting of nutmeg. Add a cinnamon stick or star of anise on top for an extra festive look.
