Bourbon Chocolate Hand Pies

Here is our elevated but simple take on a fall classic to get you ready for game day- chocolate pie! These personal sized hand pies alleviate the mess and extra dishes. Your guests will love snacking on more than one of these. A(n optional) splash of bourbon to your filling adds a delectable richness! We guarantee you'll make more than one batch of these this season!


Ingredients

2 9inch pie crusts (home made or pre-made)

3 tablespoons unsweetened cocoa powder

1/3 cup brown sugar

2/3 cup heavy cream

1/4 teaspoon salt

1/4 cup Bourbon

1 bag of semi-sweet chocolate chips

3 tablespoons salted butter, cut into cubes

1 1/2 teaspoons vanilla




Instructions


Cut Dough

  1. Preheat oven to 400 degrees. Roll dough out. Cut into desired size. Roll cut pie dough once more to thin out, keeping it as circular as possible. Once all dough has been cut, place on parchment paper and place in freezer.

Make Filling

  1. In a heavy bottomed saucepan, combine cocoa powder, brown sugar, cream, salt and about half of the chocolate chips.

  2. Over medium-low heat, whisk until everything is melted. Add bourbon and continue to cook on low heat with a gentle simmer for 5 minutes.

  3. Remove chocolate mixture from heat and mix in remaining chocolate, butter, and vanilla. Stir until mixture is smooth.

  4. Set aside to cool (if in a hurry, place in freezer for a few minutes.)

Assemble Pies

  1. Line a rimmed cookie sheet with parchment and place four pie on pan. Using a pastry brush, dab water around the edge of the disc.

  2. Add 2 tablespoons of chocolate filling to eat round in the center. Fold one side over the filling, pinching edges together. Use a fork to seal the edges. Place back in the freezer for a few minutes.

  3. Bake for 20 minutes. Check if crust is golden brown – if not – put back in for 3-5 more minutes. Once cooled, brush with melted butter and sprinkle sugar on top. Allow to cool and serve.
